Visit to Jerusalem and Israel this Spring.

My wife and I are going to visit Jerusalem and Israel in March for 10 days. We'll be centered in Jerusalem, but hope to see sites up north and, to the south, Petra in Jordan. Any recommendations for tour guides for specific sites, hotel recommendations, or things we absolutely must do or things we can skip? Appreciate any help.
