If she stole the plants, she obviously wants them pretty badly and was not going to just throw them away. She will presumably try to plant them at her current residence, so it should be pretty easy to get evidence that she stole them.

If there are any pictures of the home prior to sale (with the garden/plants pictured), the police should be able to compare and use that as evidence, coupled with the circumstantial evidence of the statements she made about wanting the plants just before the crime occurred.
