Professional athletes are employees of the states where the team is located. If they start having their players play games when the states are not open, they are going to be opening themselves up for employment lawsuits and likely contractual lawsuits if anything goes wrong. They might be able to get themselves some protections through negotiating with the players' associations, but that is unlikely to do much on an individual player basis.
